These nachos are to die for. I made this recipe on the spot and it turned out perfectly the first time. Since I have become paleo, I have missed eating my favorite Mexican food, so I decided to make my own paleo version of chicken nachos.
RECIPE DETAILS:
- sweet potato chips
- siete spicy blanco cashew queso
- shredded chicken cooked on the stove
- red onion
- jalapeños
DIRECTIONS:
- Turn oven on to broil setting
- Spread sweet potato chips on an oven safe sheet.
- Warm cashew queso on the stove for 3-5 minutes on low heat.
- Sprinkle the shredded chicken, red onion, and jalapeños over the chips.
- Drizzle the heated queso over the chips and toppings.
- Cook the nachos in the oven for 3-5 minutes. Keep a close eye on them because the sweet potato will burn very quickly.
