loaded chicken nachos

These nachos are to die for. I made this recipe on the spot and it turned out perfectly the first time. Since I have become paleo, I have missed eating my favorite Mexican food, so I decided to make my own paleo version of chicken nachos.

RECIPE DETAILS:

  • sweet potato chips
  • siete spicy blanco cashew queso
  • shredded chicken cooked on the stove
  • red onion
  • jalapeños

DIRECTIONS:

  • Turn oven on to broil setting
  • Spread sweet potato chips on an oven safe sheet.
  • Warm cashew queso on the stove for 3-5 minutes on low heat.
  • Sprinkle the shredded chicken, red onion, and jalapeños over the chips.
  • Drizzle the heated queso over the chips and toppings.
  • Cook the nachos in the oven for 3-5 minutes. Keep a close eye on them because the sweet potato will burn very quickly.
